Ingredients

  • 1 cup slightly expired steel cut oats
  • 2 tablespoons vegetable oil

  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 zucchini, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar

Instructions

Cook the steel cut oats according to package instructions. Drain and set aside.

Heat vegetable oil in a large skillet or wok over medium heat.
