
Steel Cut Oat and Vegetable Stir-Fry
A savory and nutritious stir-fry made with slightly expired steel cut oats. Ensure the oats are still within the safe consumption period. The stir-frying process will further ensure food safety.
Ingredients
- 1 cup slightly expired steel cut oats
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1 zucchini, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
Cook the steel cut oats according to package instructions. Drain and set aside.
Heat vegetable oil in a large skillet or wok over medium heat.
Add the onion and garlic, and sauté until fragrant and slightly caramelized.
Add the bell pepper, carrot, and zucchini. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
Add the cooked steel cut oats to the skillet and toss to combine with the vegetables.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, salt, and pepper.
Pour the sauce over the oat and vegetable mixture, and stir-fry for an additional 2-3 minutes until everything is well-coated and heated through.
Serve hot as a main dish or as a side dish with your choice of protein.
