Ingredients
- 2 cups slightly past expiration redcurrants
- 1 cup sugar
- 1 lemon, juiced

1. In a large saucepan, combine the redcurrants, sugar, and lemon juice.

2. Cook the mixture over medium heat, stirring occasionally, until the redcurrants burst and release their juices, about 15 minutes.

3. Reduce the heat to low and continue to cook, stirring occasionally, until the mixture thickens and reaches a jam-like consistency, about 30 minutes.

4. Remove from heat and let the jam cool for a few minutes.

5. Transfer the jam to clean and sterilized jars, and let cool completely before sealing.
