Ingredients
- 2 cups slightly past expiration redcurrants
- 1 cup sugar
- 1 lemon, juiced
Instructions
- 1. In a large saucepan, combine the redcurrants, sugar, and lemon juice.
- 2. Cook the mixture over medium heat, stirring occasionally, until the redcurrants burst and release their juices, about 15 minutes.
- 3. Reduce the heat to low and continue to cook, stirring occasionally, until the mixture thickens and reaches a jam-like consistency, about 30 minutes.
- 4. Remove from heat and let the jam cool for a few minutes.
- 5. Transfer the jam to clean and sterilized jars, and let cool completely before sealing.
