Ingredients

  • 1 cup cooked quinoa
  • 4 bell peppers
  • 1 cup black beans
  • 1 cup corn
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded cheese
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, cilantro, shredded cheese, cumin, paprika, salt, and pepper.
  4. Stuff the bell peppers with the quinoa mixture.
  5. Place the stuffed bell peppers in a baking dish and bake for 30-35 minutes, or until the peppers are tender.
  6. Serve hot and enjoy!
