Ingredients
- 1 cup cooked quinoa
- 4 bell peppers
- 1 cup black beans
- 1 cup corn
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup shredded cheese
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, cilantro, shredded cheese, cumin, paprika, salt, and pepper.
- Stuff the bell peppers with the quinoa mixture.
- Place the stuffed bell peppers in a baking dish and bake for 30-35 minutes, or until the peppers are tender.
- Serve hot and enjoy!
