
Pancake Mix Muffins
These muffins are a delicious way to use up expired pancake mix. Make sure the mix is still safe to consume before using.

Ingredients
- 1 1/2 cups expired pancake mix
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1/4 cup sugar
- 1 egg
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the expired pancake mix, milk, vegetable oil, sugar, and egg. Stir until just combined.
- If desired, fold in the chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- Enjoy the muffins as a snack or for breakfast.
