
Banana Oatmeal Muffins
These delicious muffins are a great way to use up expired oatmeal packets. The baking process ensures food safety.
Ingredients
- 2 ripe bananas, mashed
- 1 cup expired oatmeal packets
- 1/4 cup milk
- 1/4 cup honey
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, combine the mashed bananas, expired oatmeal packets, milk, honey, melted butter, and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
Add the dry ingredients to the wet ingredients and stir until just combined.
Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
