Ingredients

  • 1 lb lamb chops, thawed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, peeled and chopped
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

Heat the olive oil in a skillet over medium heat. Brown the lamb chops on both sides and transfer them to a slow cooker.

In the same skillet, sauté the diced onion, chopped carrots, diced potatoes, and minced garlic until slightly softened.

Transfer the sautéed vegetables to the slow cooker with the lamb chops.

Add beef broth, water, dried thyme, dried rosemary, salt, and pepper to the slow cooker.

Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the lamb is tender and fully cooked.

Once cooked, remove any bones from the lamb chops and shred the meat. Return the shredded meat to the slow cooker and stir well.
