
Jollof Rice Stuffed Peppers
Give expired Jollof Rice Mix new life by stuffing it into colorful bell peppers. Baking the peppers ensures thorough heating for food safety.

Ingredients
- 4 bell peppers
- 2 cups expired Jollof Rice Mix
- 1 cup cooked chicken, shredded
- 1/2 cup frozen peas
- 1/2 cup corn kernels
- 1/4 cup tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut off the tops of the bell peppers and remove the seeds and membranes. Set aside.
- In a mixing bowl, combine the expired Jollof Rice Mix, cooked chicken, frozen peas, corn kernels, tomato paste, paprika, dried thyme, dried oregano, salt, and pepper. Mix well.
- Stuff each bell pepper with the Jollof Rice mixture and place them in a baking dish. If desired, sprinkle shredded cheese over the top.
- Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender and the filling is heated through.
- Remove from the oven and let cool for a few minutes before serving. Enjoy!
