Ingredients

  • 1 cup expired Instant Falafel Mix
  • 1/2 cup water
  • 1/4 cup finely chopped red onion
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup pitted Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Mixed salad greens, for serving

Instructions

In a bowl, combine the expired Instant Falafel Mix and water. Mix until well combined and let it sit for 10 minutes to absorb the liquid.

Form the falafel mixture into small balls and flatten them slightly.

Heat olive oil in a non-stick skillet over medium heat.

Carefully place the falafel patties in the skillet and cook until golden brown and crispy on both sides, approximately 3-4 minutes per side.

Remove the falafel patties from the skillet and let them cool slightly.

In a separate bowl, combine the chopped red onion, cherry tomatoes, cucumber, olives, feta cheese, lemon juice, olive oil, salt, and pepper. Toss well to combine.

Arrange the mixed salad greens in a bowl and top with the cooked falafel patties and the vegetable mixture.
