
Cinnamon Oatmeal Cookies
A delicious recipe for oatmeal cookies that uses expired ground cinnamon, ensuring food safety and reducing food waste.
Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups old-fashioned oats
- 2 teaspoons expired ground cinnamon (1095 days after expiry)
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together the flour, baking soda, and salt.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined.
Stir in the oats and expired ground cinnamon.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until golden brown around the edges.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
