
Gherkin Pickle Pasta Salad
A refreshing and easy-to-make pasta salad recipe that utilizes slightly expired gherkin pickles for a tangy and crunchy twist. Perfect for a summer picnic or potluck.
Ingredients
- 8 ounces pasta
- 1 cup chopped gherkin pickles
- 1/2 cup diced red bell pepper
- 1/2 cup diced red onion
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons white vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
Cook the pasta according to package instructions. Drain and set aside to cool.
In a large bowl, combine the chopped gherkin pickles, diced red bell pepper, diced red onion, sliced black olives, and chopped fresh parsley.
In a small bowl, whisk together the olive oil, white vinegar, Dijon mustard, salt, and pepper.
Add the cooked pasta to the bowl with the vegetables and pour the dressing over the top.
Toss everything together until well combined and evenly coated with the dressing.
Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
