- 1 tablespoon vegetable oil
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 cup sliced carrots
- 1 cup snap peas
- 1 cup expired gherkin pickles, sliced
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- Cooked rice, for serving
Instructions
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add the sliced onion, bell pepper, carrots, and snap peas. Stir-fry for 5-6 minutes until the vegetables are slightly tender.
- In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, cornstarch, and water.
- Pour the sauce mixture into the skillet with the vegetables. Stir well to coat the vegetables.
- Add the sliced expired gherkin pickles to the skillet and stir-fry for an additional 2-3 minutes.
- Remove from heat and serve the stir-fry over cooked rice.
