
Vegetable Stir-Fry
A quick and flavorful stir-fry recipe that utilizes expired frozen mixed vegetables, reducing food waste without compromising safety.
Ingredients
- 2 cups frozen mixed vegetables (past expiration date)
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1/2 onion, sliced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1/4 cup water
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
In a small bowl, whisk together soy sauce, cornstarch, water, salt, and pepper. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add minced garlic and sliced onion to the skillet. Stir-fry for 2 minutes until fragrant and onions start to soften.
Add sliced bell pepper, broccoli florets, and frozen mixed vegetables to the skillet. Stir-fry for 5-6 minutes until the vegetables are tender.
Pour the soy sauce mixture over the vegetables, stirring constantly until the sauce thickens and coats the vegetables.
Remove from heat and serve the vegetable stir-fry over cooked rice or noodles.
