Ingredients
- 2 cups cooked rice
- 1 cup frozen mixed vegetables (past expiration date)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger powder
- Salt and pepper to taste

Instructions

Heat vegetable oil in a large skillet or wok over medium heat.

Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.

In the same skillet, add the frozen mixed vegetables. Cook for 3-4 minutes until they start to soften.

Add the cooked rice to the skillet and stir-fry for another 3-4 minutes.

Sprinkle garlic powder, ginger powder, salt, and pepper over the rice and vegetables. Mix well.

Pour soy sauce over the mixture and stir-fry for an additional 2-3 minutes.

Add the scrambled eggs back into the skillet and toss everything together until well combined.
