Ingredients

  • 2 cups cooked rice
  • 3 eggs (past expiration date but still safe to consume)
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil

Instructions

In a large skillet or wok, heat the vegetable oil over medium heat.

Add the mixed vegetables and cook until tender, about 5 minutes.

Push the vegetables to one side of the skillet and crack the eggs into the empty space.
