
Egg Fried Rice
A delicious and easy recipe that uses expired eggs to create a flavorful fried rice.

Ingredients
- 2 cups cooked rice
- 3 eggs (past expiration date but still safe to consume)
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add the mixed vegetables and cook until tender, about 5 minutes.
- Push the vegetables to one side of the skillet and crack the eggs into the empty space.
- Scramble the eggs until cooked through, then mix them with the vegetables.
- Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.
- Pour the soy sauce over the rice mixture and stir well to coat everything evenly.
- Season with salt and pepper to taste.
- Continue cooking for another 2-3 minutes, stirring occasionally, until the rice is heated through.
- Serve hot and enjoy!
