
Durian Pancakes
Delicious pancakes made with expired durian, promoting food safety and minimizing food waste.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup expired durian (5 days after expiry), mashed
- 1 cup milk (dairy or non-dairy)
- 1 large egg
- 2 tablespoons vegetable oil
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, combine the mashed expired durian, milk, egg, and vegetable oil.
Pour the wet mixture into the dry mixture and stir until just combined. Do not overmix; lumps are okay.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Repeat with the remaining batter.
Serve the durian pancakes warm with your favorite toppings such as maple syrup, fresh fruits, or whipped cream.
