  • 8 oz expired dry angel hair pasta
  • 2 tbsp olive oil
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 carrot, thinly sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

Bring a large pot of salted water to a boil.

Add the expired angel hair pasta and cook according to package instructions until al dente. Make sure to cook it for an extra minute to ensure food safety.

Heat olive oil in a large skillet over medium heat.

Add the sliced onion, bell pepper, zucchini, carrot, and broccoli florets. Sauté for 5-6 minutes until the vegetables are tender-crisp.

Add the minced garlic and cherry tomatoes to the skillet. Cook for an additional 2 minutes.

Pour in the vegetable broth and simmer for 2-3 minutes until the broth reduces slightly.
