
Chorizo Sausage Breakfast Casserole

Ingredients
- 1 package of slightly expired chorizo sausage
- 6 eggs
- 1 cup of milk
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 2 cups of frozen hash browns
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the chorizo sausage until browned and crumbled. Remove from heat and set aside.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Add the cooked chorizo sausage, diced bell peppers, onion, frozen hash browns, and shredded cheddar cheese to the egg mixture. Stir well to combine.
- Pour the mixture into a greased 9x13-inch baking dish.
- Bake in the preheated oven for 45-50 minutes or until the casserole is set and the top is golden brown.
- Allow the casserole to cool for a few minutes before serving.
