Ingredients
- 1 cup slightly expired Chia Pudding Mix
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 1 large egg
- 2 tbsp vegetable oil

In a large bowl, whisk together the Chia Pudding Mix, flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, beat together the buttermilk, egg, and vegetable oil.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Heat a non-stick pan or griddle over medium heat.

Pour 1/4 cup of batter onto the pan for each pancake.

Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.
