Ingredients

  • 1 cup expired cereal
  • 1/2 cup nut butter (e.g. peanut butter, almond butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup dried fruits (e.g. raisins, cranberries)
  • 1/4 cup chopped nuts (e.g. almonds, walnuts)
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup mini chocolate chips (optional)

Instructions

1. Open the cereal box and check for any signs of spoilage. If the cereal looks and smells normal, it is safe to use.

2. In a mixing bowl, combine the expired cereal, nut butter, honey or maple syrup, dried fruits, chopped nuts, shredded coconut (if using), and mini chocolate chips (if using).

3. Mix well until all ingredients are evenly combined.

4. Take small portions of the mixture and roll into bite-sized balls. If the mixture is too sticky, wet your hands with water to prevent sticking.

5. Place the energy balls on a baking sheet lined with parchment paper.

6. Refrigerate the energy balls for at least 30 minutes to firm up.

7. Once firm, transfer the energy balls to an airtight container and store in the refrigerator for up to a week.
