Ingredients

  • 4 cups expired carrots, fresh chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic, sauté until translucent.

Add the expired carrots and cook for 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring to a boil.

Reduce heat, cover, and simmer for 20 minutes or until the carrots are tender.

Using an immersion blender or regular blender, puree the soup until smooth.
