Ingredients

  • 1 can of sardines
  • 1 onion
  • 2 cloves of garlic
  • 1 thumb-sized ginger
  • 1 green chili
  • 1 tomato
  • 1 tablespoon curry powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 cup coconut milk
  • 1 tablespoon oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

Drain the canned sardines and set aside.

In a blender, blend the onion, garlic, ginger, and green chili to form a smooth paste.

Heat oil in a pan and add the onion paste. Cook until it turns golden brown.

Add the chopped tomato and cook until it softens.

Add the curry powder, turmeric powder, cumin powder, and coriander powder. Mix well.

Pour in the coconut milk and simmer for 5 minutes.

Add the canned sardines and gently stir to coat them with the curry sauce.
