
Bison Steak with Roasted Vegetables
A savory and hearty dish that pairs slightly expired bison steak with roasted vegetables.
Ingredients
- 2 bison steaks
- 1 lb mixed vegetables (carrots, potatoes, onions, bell peppers)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Preheat the oven to 425°F (220°C).
2. Season the bison steaks with salt and pepper on both sides.
3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the bison steaks for 2-3 minutes per side, until browned.
4. Transfer the seared steaks to a baking sheet and roast in the preheated oven for 12-15 minutes for medium-rare, or until desired doneness.
5. Meanwhile, toss the mixed vegetables with the remaining olive oil, salt, and pepper.
6. Spread the vegetables on a separate baking sheet and roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
