Ingredients

  • 1 1/2 cups expired almond paste
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup sliced almonds

Instructions

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large mixing bowl, combine the expired almond paste, melted butter, and granulated sugar. Mix until well blended.

Add the eggs and vanilla extract to the bowl. Beat until smooth.

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the almond paste mixture, alternating with the milk. Mix until just combined.

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Sprinkle the sliced almonds on top of each muffin.

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
